Blackcurrant
The blackcurrant of Quebec, or the discovery of a treasure.
Until recently, a very widespread opinion in North America, was that currant is a plant that grows mainly in climates like the one found in the south of France, almost in the same way as
a vine. The confusion probably came from the town called Cassis located near Marseille and the fact that France, indeed, is a major consumer of this fruit in all its forms, including sorbets,
liqueurs are only the most famous delicacies. However, blackcurrant is a native plant from Nordic countries like Finland, Russia and Poland.
Because of its northern location, Quebec should logically be a land of predilection for the fruit of which the first medium scale cultures were performed on the Island of Orleans.. people
are now discovering all the qualities of the fruit : a very special perfume used in winemaking to describe some wine aromas (blackcurrant notes), a zesty taste in large part from the incredibly
high rate of vitamin C, three times that of a lemon, and antioxidants that confer virtues recognized by health authorities.
